      Title: Sugar-Free Chocolate Fudge

      Yield: 16 servings
 
     16 oz Cream cheese, softened
      2    Squares, 1 oz. each,
           -unsweetened chocolate,
           -melted and cooled
     24 pk Aspartame sweetener (equal
           -to 1/2 cup sugar)  *
      1 ts Vanilla extract
    1/2 c  Chopped pecans
 
      *  This amount of aspartame (Equal) sounds off. It only takes 12
  packets of Equal to equal 1/2 cup of sugar. I don't know what to tell
  you as far as judging how much to use. I guess I'd mix it up and
  taste it then if it needs more just stir it in.
      In a small mixing bowl, beat the cream cheese, chocolate,
  sweetener and vanilla until smooth.  Stir in pecans. Pour into an
  8-inch square pan lined with foil. Cover and refrigerate overnight.
  Cut into 16 squares. Serve chilled.
      Nutritional information per serving: calories - 147, protein - 3
  gm., fat - 14 gm. (*), carbohydrates ~ 5 gm., cholesterol - 31 mg.,
  sodium - 84 mg.
   Diabetic Exchanges: Fat - 3.
      (*)  To lower the fat and cholesterol content use the light
  (Neufchatel) cream cheese and leave out the pecans. (Trish)
